How to Prepare Almond Milk Infused with Flavor: Cherry Edition

One of my favorite almond milks to make (that I always have a jug of around my house) is a simple Honey Vanilla Almond Milk. When I started playing with other flavors in my almond milk, I used this simple almond milk recipe as a baseline and added to it. To infuse the nut milk with the cherry flavor that I was looking for, I decided to try making a simple compote combining frozen cherries, honey, and lemon juice, and cooking that down for about 15 minutes. I find that this process deepens and sweetens the flavor throughout the almond milk.

I did contemplate just blending fruit with the rest of the ingredients, but cooking everything first and creating the compote creates a flavor that will really come through once the almond milk is strained.

Why Should You Make Your Own Almond Milk?

Why on earth would you want to learn how to prepare almond milk at home?

Until I started making almond milk at home, I was a serial almond milk buyer – I had two cartons in my fridge at all times because I use it for coffee, lattes, and miscellaneous recipes. As I started to become more conscious about what ingredients were in the foods I was buying, I realized that the almond milk brands without additional gums and other additives were extremely expensive, so I started researching how to make almond milk at home and realized it’s actually super easy!

I originally thought you needed a lot of random gadgets to make almond milk, but after some research it was clear that I had been overcomplicating the process. To make homemade almond milk at home you need a blender and a nut milk bag. If you don’t have a nut milk bag, you can use a cheesecloth or a thin tea towel – either of these items will work just fine to strain your almond milk from your almonds.

Why I Love This Cherry Almond Milk Recipe

In 2024, I discovered that my body produces antibodies that attack my thyroid. My doctor highly recommended that I stick to an anti-inflammatory diet because of the correlation between thyroid function and inflammation. I create most recipes, including this Cherry Almond Milk, with the intention of making something delicious that is going to serve my needs and leave me feeling my absolute best. I’ve noticed that eating as clean as possible has made me feel better, heal faster, and help with my overall cognitive function. I am by no means a doctor or registered dietician, but I did want to share my personal “why” for creating recipes like this one.

Ingredients:

  • Frozen Cherries
  • Almonds
  • Water
  • Organic Honey
  • Lemon

How to Make CherryAlmond Milk:

For the Cherry Compote:

Combine Your Ingredients: Start by adding your frozen cherries, fresh lemon juice, and honey to a pot.

Cook Down Your Cherry Compote: Place your pot over medium heat and cook, periodically stirring for 15 minutes until your cherries begin to break apart into a thick jammy liquid. Once it reaches this point, remove your compote from the heat and transfer it to a glass dish to cool.

For the Almond Milk:

Prepare Your Almonds: Start by soaking your almonds in water for at least 3 hours, or overnight if possible until they’re soft enough to blend. Once they’re soft, rinse and strain your almonds and add them to your blender with 3 cups of fresh drinking water

Add Your Flavoring: Add your cooled cherry compote to your blender with your almonds and blend it until smooth. There will still be traces of almond skin, that’s okay! You’ll strain those out in the next step.

Straining Your Almond Milk: Place your nut milk bag (or a tea towel) over a large bowl and dump your almond milk mixture into it. Using your hands, wring out the bag until all of the liquid is strained into the bowl.

Serve Your Homemade Cherry Almond Milk: Transfer your Cherry Almond Milk to a pouring dish with a lid and enjoy in your coffee or matcha lattes! This will keep in the refrigerator for 5-7 days.
