Dark Chocolate Peanut Butter Stuffed Dates are a chewy, creamy, and delicious treat that doesn’t contain any refined sugar and is an easy no-bake dessert! These are great for batching out and storing in the freezer when you want something sweet because they will keep for 2-3 months when stored in the freezer in an air-tight container (they’re so good, I’m not sure they’ll last that long, though!).

If your a sweet-treat-after-dinner person, you will absolutely love these chocolate peanut butter dates! Medjool dates are basically a natural ball of caramel – they’re chewy, sweet, and delicious even on their own! When you stuff Medjool dates with peanut butter and dunk them in rich and decadent dark chocolate, it takes them to a whole new level, and because they’re not packed with refined sugars they won’t leave you with the same sugar crash that you might get from store bought candy.

These little treats also last for 2-3 months in the freezer, so you can make a huge batch of them and have dessert for weeks to come! You can even add sprinkles to the top to make them festive for whatever holiday is around the corner.

Medjool Dates – Nature’s Caramel!

The key ingredients to these dark chocolate peanut butter dates are, well, Medjool dates (probably not much of a surprise there!). Dates are a natural sweet treat that grow on the date palm. They are usually about 1 1/2 to 2 inches long and have a slender pit in the center that you must remove before enjoying them. When you bite into a date, they are sticky and chewy, closely resembling caramel with a slightly less-sticky consistency. Aside from using dates to make these dark chocolate peanut butter date candies, I love making homemade date caramel and using it in my homemade Twix Bars!

How to Make Dark Chocolate Peanut Butter Stuffed Dates

Pit Your Dates: If your dates still have the pits in them, remove them by carefully splitting open one side your your date with your fingers. Alternatively, you can use a knife to cut halfway down the long side of each date for a cleaner cut. Discard the pits.

*If you are using pitted dates, you’ll still want to cut or pull them apart halfway down the long side so that you can fill them with peanut butter in the next step!

Stuff Your Dates: Scoop your peanut butter into a plastic bag and cut the tip off so that you can pipe it into the center of your dates where you made your cut down the long edge of the date. Pipe your peanut butter into each date and press the open ends of the date together to sandwich the peanut butter in the middle.

Freeze Your Dates: Once all of your dates are stuffed with peanut butter, place them seam-side up in a container or a small parchment-lined baking sheet and put them in the freezer to set for 15-30 minutes. While the dates set, chop up your peanuts and set them aside in a small bowl.

Melt Your Dark Chocolate: Once your dates have had time to set in the freezer and the peanut butter is stiff in place, add white chocolate to a bowl with coconut oil place it over a shallow simmering pot of water, mixing periodically until the chocolate has melted (double-boiler method). Alternatively, you can place your dark chocolate and coconut oil in the microwave and heat then stir it in 30-second increments until the chocolate has fully melted.

Note: *Make sure that you do NOT overheat your chocolate, it will burn and become crumbly if it gets too hot so keep an eye on it especially if using a microwave!

Coat Your Dates: Once your dark chocolate is melted, you can start coating your dates! Use a fork to lower each date into the chocolate and roll it until completely covered. Lift each date out of the melted chocolate and wipe the bottom of your fork on the edge of the bowl to get rid of any excess chocolate before placing your coated dates onto a parchment-lined baking sheet or container. Lastly, sprinkle your chopped peanuts over the top of each of your coated dates before they set.

Freeze Your Dates: After all of your dates have been coated and garnished, place them back in your freezer for 15-30 minutes until the chocolate has hardened around your dates.

Storing Your Dates: Store your dates in the freezer and enjoy whenever you want a little sweet treat! You can also keep them in the fridge if you prefer a softer treat.
