Broccolini, the NBA counterpart of broccoli, is a delicious and easy vegetable to prepare in under 20 minutes. This roasted broccolini spritzed with fresh lemon juice tastes so incredible, even broccoli-skeptics love this one!

Broccolini: A Fresh and Simple Vegetable Staple
When you aren’t feeling like the regular head of broccoli, lean into broccolini! This recipe can easily be made with broccoli or broccolini, but I love to make it with the latter because something about it is just slightly more elevated. It pairs wonderfully with a savory chicken, like my Apple Cider Roasted Chicken, or would also go great next to a beautiful steak or piece of salmon. Whatever you pair it with, I guarantee by the end of dinner this delicious veggie dish will be gone!.

Why I Love This Lemon Roasted Broccolini
In 2024, I discovered that my body produces antibodies that attack my thyroid. My doctor highly recommended that I stick to an anti-inflammatory diet because of the correlation between thyroid function and inflammation. I create most recipes, including this Lemon Roasted Broccolini, with the intention of making something delicious that is going to serve my needs and leave me feeling my absolute best. Ingredients:
- Broccolini
- Lemon
- Olive Oil
- Salt
- Pepper
How to Make Lemon Roasted Broccolini Using Fresh Lemon Juice
Preheat your oven to 425 degrees F
Prepare Your Ingredients: Start by cleaning your broccolini and adding it to a large bowl with your olive oil, salt, and pepper. Toss the broccolini until evenly coated
Bake Your Broccolini: Place your broccolini on a parchment-lined baking sheet and top with additional salt and pepper as needed, and squeeze 1/2 of a fresh lemon evenly over the top of your broccolini. Place it in the oven for 18-20 minutes until it has turned a deep green color and is slightly crispy on the edges
Serve Your Broccolini: Allow your broccolini to cool slightly then transfer it to a serving plate with a few slices of lemon. Serve warm and enjoy!

- 1/2 fresh lemon (juiced – optionally you can save the lemon slices to bake a serve with the broccolini)
- Olive oil
- Salt (to taste)
