Broccolini, the NBA counterpart of broccoli, is a delicious and easy vegetable to prepare in under 20 minutes. This roasted broccolini spritzed with fresh lemon juice tastes incredible and is incredible for you – even broccoli-skeptics love this one!
Broccolini: A Fresh and Simple Vegetable Staple
When you aren’t feeling like the regular head of broccoli, lean into broccolini! This recipe can easily be made with broccoli or broccolini, but I love to make it with the latter because something about it is just slightly more elevated. It pairs wonderfully with a savory chicken, like my Apple Cider Roasted Chicken, or would also go great next to a beautiful steak or piece of salmon. Whatever you pair it with, I guarantee by the end of dinner this delicious veggie dish will be gone, and you can rest easy knowing it’s healthy and made with clean, good-for-you ingredients.
Why I Love This Recipe From a Health-Perspective
I am very intentional with my ingredients, I like to develop recipes that are both delicious and that will work for me by offering extra nutritional benefits to my body.
Earlier this year, I discovered that my body produces antibodies that attack my thyroid. My doctor highly recommended that I stick to an anti-inflammatory diet because of the correlation between thyroid function and inflammation. I create most recipes, including this Lemon Roasted Broccolini, with anti-inflammatory properties in mind. I’ve noticed that eating as clean as possible has made me feel better, heal faster, and help with my overall cognitive function. I am by no means a doctor or registered dietician, but I did want to share my personal “why” for creating recipes like this one because eating this way really has positively impacted my health, and I figured maybe it could help others, too.
Ingredients:
- Broccolini
- Lemon
- Olive Oil
- Salt
- Pepper
How to Make These Crispy Roasted Brussels Sprouts
Preheat your oven to 425 degrees F
Prepare Your Ingredients: Start by cleaning your broccolini and adding it to a large bowl with your olive oil, salt, and pepper. Toss the broccolini until evenly coated
Bake Your Broccolini: Place your broccolini on a parchment-lined baking sheet and top with additional salt and pepper as needed, and squeeze 1/2 of a fresh lemon evenly over the top of your broccolini. Place it in the oven for 18-20 minutes until it has turned a deep green color and is slightly crispy on the edges
Serve Your Broccolini: Allow your broccolini to cool slightly then transfer it to a serving plate with a few slices of lemon. Serve warm and enjoy!
