Egg White Bites With Goat Cheese and Veggies (Meal-Prep Breakfast!)

I’m a sucker for adding egg white bites to my Starbucks order – they’re the perfect light breakfast or snack and don’t come with the guilt that a croissant or coffee cake might. I do, however, hate spending money on things I know I can easily do myself – so, this simple and healthy egg white bite recipe was born.

An Easy and Delicious Breakfast on the Go

These egg white bites made with goat cheese, bell peppers, and spinach are my own homemade version of the Starbucks egg bites (more delicious and cost-effective). They’re a great meal prep breakfast idea whether you work from home and want something easy to heat up in the morning, or if you’re on the go and need something that you can take with you or pack in a lunch! They come together so easily and quickly making them the ideal meal prep for someone with a packed schedule and little time.

I love packing my egg white bites with bell peppers, spinach, and goat cheese – but you can really customize these any way you want! If you’re looking to add a protein into the mix, ground turkey sausage or chopped chicken sausage is great in these egg white muffins as well.

Meal Prepping and Customizing Your Egg Bites

I usually like to make a batch of these egg bites on Sunday night ahead of the week, then reheat them and add a little goat cheese on top when I eat them. Goat cheese adds a creamy and delicious layer of flavor to any dish you add it to – these egg bites included! Feta cheese also works great in these egg white bites.

If you aren’t a fan of goat cheese or prefer to switch up any of the other ingredients in these egg bites – you absolutely can! Sometimes I like to add pieces of turkey or pre-cooked turkey bacon to my egg bites for extra protein, you could also add ham, breakfast sausage, or even crab!

Egg White Bites Ingredients:

  • Eggs Whites
  • Bell Peppers
  • Goat Cheese
  • Spinach

How to Make These Copycat Starbucks Egg White Bites:

  1. Preheat your over to 350 degrees F
  2. Prep Your Ingredients: Dice your peppers, and then chop up your spinach and set both aside
  3. Mix Egg Whites: In a separate bowl, (preferably one that has a pour spout to make transferring it into a muffin tin easy peasy), whisk together your egg whites and goat cheese 
  4. Prepare Egg White Bite Muffins: Coat a muffin tin with non-stick olive oil spray and pour your egg whites and goat cheese mixture into each muffin tin cup. Add about a tablespoon of peppers and spinach to each muffin cup, then stir with a fork to combine. 
  5. Bake Your Egg White Bites: Place your egg white bites into the oven for 25-30 minutes until fully cooked. Once cooked, let them sit for a few minutes before using a spatula or knife to remove each bite from the muffin tin
