This Feta Greek Salad made with crisp greens, feta cheese, dill, and my sweet and tangy homemade lemon vinaigrette dressing is absolutely to die for and dangerously easy to make! It’s the perfect plus one to your next potluck, or healthy meal prep to make at the beginning of the week and enjoy for a quick and healthy lunch or dinner.

What Makes this Greek Salad Special

I have always been a sucker for the Trader Joe’s Greek Salad, but I’m not a huge fan of repeatedly buying salads when they’re easy and cheap healthy meals to make at home! I’ve noticed that a great Greek Salad always contains feta cheese, dill, and a fresh vinaigrette to marry all of the ingredients together! One of my favorite vegetables to incorporate into salads that adds a healthy crunch is Snow Peas. While it’s a simple secret ingredient, by adding these in you’ll notice the difference in flavor and crunch that takes this salad to the next level.

Fresh dill also may seem like an unnecessary step, and while it’s optional you don’t want to miss out on the extra flavor it adds to this salad! Combined with the vinaigrette and feta cheese, it adds a depth of flavor that will make you want to add it to every salad!

Homemade Honey Lemon Vinaigrette Dressing

I’ve been on a mission to develop a few staple vinaigrette salad dressing recipes that I can make at home and keep in the fridge to add to my salads throughout the week – and so far I’m definitely playing favorites with the simple homemade honey lemon vinaigrette dressing. 

I grew up in a household where we either used olive oil and balsamic vinegar on salads, or a pre-made dressing from the fridge. I never knew how easy it was to make salad dressing until reading Salt Fat Acid Heat (where I draw a good chunk of my cooking and baking knowledge from – highly recommend to home chefs new and seasoned). The basic elements of a good vinaigrette include a fat, acid, emulsifier, salt, and something sweet.

In this recipe, my fat of choice is olive oil but you can also substitute it for olive oil if you prefer. For the acid – red wine vinegar absolutely makes this salad, along with a little bit of fresh squeezed lemon juice. Crushed garlic and honey add a little extra flavor and sweetness, and help to bring the mixture together into a dressing, while salt and pepper help balance it out to give you the perfect sweet and tangy homemade salad dressing. 

I love making my own salad dressing for the same reason I love to make a lot of commonly bought ingredients from scratch – I know exactly what’s going into the meals that I’m creating. There is so much power in being able to put together a few fresh ingredients to create something instead of buying a manufactured version at the store. You’ll notice as you start to cut out store-bought items like dressing, you’re also cutting out the preservatives that come with them which can make you feel better and help you reach and maintain your health goals!

Ingredients:

For the salad you’ll need:

  • Romaine Lettuce
  • Snow Peas
  • Fresh Dill
  • Feta Cheese
  • Cucumber

For the vinaigrette you’ll need:

  • Extra Virgin Olive Oil
  • Lemon (for juicing)
  • Red Wine Vinegar
  • Garlic Cloves
  • Salt and Pepper

Ingredients

For the Salad:

  • 4 cups Shredded Romaine Lettuce (Can also use shredded iceberg lettuce)
  • 1 cup Snow Peas (Cut into chunks)
  • 1/8 cup Fresh Dill
  • 1/8 cup Feta Cheese (can use low-fat or non-fat as well)
  • 1 cup Cucumbers (Sliced and halved)

For the Dressing:

  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 Lemon (juiced)
  • 2 tbsp Red Wine Vinegar
  • 2 Garlic Cloves (Pressed)
  • Salt and Pepper (to taste)

Instructions

1. Preparing your salad

Start by washing and chopping up your romaine lettuce, snow peas, fresh dill, and cucumbers

2. Combine all of your ingredients in a large bowl

3. Prepare your Honey Lemon Vinaigrette

In a separate smaller bowl, combine all dressing ingredients and whisk together until the vinaigrette has come together to create a slightly thick and cloudy dressing. Add salt and pepper to taste.

4. Toss your salad with your vinaigrette and enjoy!
