The Perfect High-Protein Breakfast

If you’re like me you love bagels but also struggle to get enough protein in your diet… Trust me, I get it – so when I discovered these high-protein Greek yogurt bagels I had to try them and they have completely leveled up my breakfast game! I’ve always found making bread products from scratch intimidating because of having to be familiar with using yeast and proofing, but lucky for me (and you if you’re in the same boat!) these bagels don’t require any yeast or additional time to proof!

How to Cook Greek Yogurt Bagels

I’ve made these bagels both in the oven and the air fryer and will admit that I’m slightly partial to cooking them in the air fryer. I have found that they cook faster and more evenly when thrown in the air fryer, so if you have one on deck – rev it up! If you prefer to use the oven they still come out just as delicious in the oven – they take about 20 minutes longer and you will need to rotate them halfway through their bake to make sure that they cook evenly!

I’ve tried a couple of different air fryers and my absolute favorite one is the Ninja AF101.

Getting the Perfect Crispy Top on Your Bagels

Eggwash is an essential part of getting that crispy top of your bagel, and acts as an adhesive for whatever seasoning you decide to use! My favorite seasoning is the Everything But The Bagel seasoning from Trader Joe’s. If you don’t like the combination of flavors in Everything But The Bagel seasoning, another great option is using flakey sea salt. For sweeter bagels, mixing together cinnamon sugar and dusting it over the top is also a great option.

How to Make Greek Yogurt Bagels

This recipe is fairly simple and uses just a few ingredients, one bowl, and doesn’t require any other ingredient preparation beforehand.

Mix together all ingredients: Start by adding your flour, Greek yogurt, baking powder, and salt to a bowl and mixing them together until combined. You can either use a spatula and then your hands once the ingredients have formed a dough or the bread hook attachment on your mixer! If you use a mixer, gradually scrape the edges of your bowl with an oiled spatula to keep the dough from sticking.

Shaping your bagels: Once you’ve formed your dough, cut it into even pieces and roll them into balls. I like to put a little olive oil on my hands to keep the dough from sticking to me as I roll. Poke a hole in the center of each dough ball and rotate it through your hands to create a bagel shape. Place them on a non-stick or parchment-lined baking sheet.

Add your eggwash and flavor: Using a fork or small whisk, combine an egg with about a teaspoon of water in a small separate bowl to create your eggwash. Use a pastry brush to coat the top of each bagel with the eggwash then add your topping of choice. The eggwash will help adhere your topping to the bagel during the baking process.

Bake your bagels in the oven: Bake at 350 degrees F for 25-30 minutes (they’ll start to get golden brown on top). Make sure to rotate your baking sheet halfway through so the bagels cook evenly.

Bake your bagels in the air fryer: Spray your air fryer basket with olive oil, non-stick spray, or parchment paper, and place your bagels inside, top down. Cook on 350 F for four minutes then flip them over and cook them for another 4-6 minutes until golden brown on top.

For the Bagel Dough:

  • 1 cup Flour
  • 1 cup Greek Yogurt
  • 1/2 tsp Salt
  • 2 tsp Baking Powder

For the Eggwash + Topping:

  • 1 Egg
  • 1 tsp Water
  • Everything But The Bagel Seasoning (or other seasoning of choice)

Instructions

  1. Combine flour, Greek yogurt, baking powder, and salt in a bowl. Mix until a dough forms. Use a spatula or a mixer with a bread hook attachment. If using a mixer, scrape the bowl edges with an oiled spatula to prevent sticking.
  2. Divide the dough into even pieces and roll them into balls. Lightly oil your hands to prevent sticking. Poke a hole in the center of each ball and shape it into a bagel. Place shaped bagels on a non-stick or parchment-lined baking sheet.
  3. Mix an egg with about a teaspoon of water to create an eggwash. Brush the eggwash over each bagel and add your preferred toppings.
  4. Bake (using oven): Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown, rotating the baking sheet halfway through for even cooking.
  5. Bake (using air fryer): Spray the air fryer basket with oil or line it with parchment paper. Place bagels top down in the basket. Cook at 350°F (175°C) for 4 minutes, then flip and cook for an additional 4-6 minutes until golden brown.
