  • 2 fresh peaches
  • 2 tbls sugar
  • 1 ball of burrata
  • 4 cups of Spring Mix or Arugula
  • Olive Oil
  • Balsamic Glaze
  • Salt
  • Pepper

Instructions

 

  1. Prepare the Peaches
    • Begin by heating up your grill to medium heat. If you prefer, you can also cook the peaches on the stove.
    • Slice the peaches in half and remove the pits. Then, thinly slice each half.
    • Brush the peach slices with olive oil and sprinkle them lightly with sugar. This will help caramelize the peaches and add a touch of sweetness.
    • Place the peach slices on the grill and cook for 3-5 minutes until you see nice grill marks. Flip and cook for an additional 3 minutes on the other side.
    • Remove the peaches from the grill and set them aside on a separate plate to cool.
  2. Assemble the Salad
    • Add the Spring Mix or Arugula to a large serving dish. Both greens work well, but Arugula adds a slightly peppery bite that complements the sweetness of the peaches.
    • Layer the grilled peach slices over the greens. If you’re a fan of grilled peaches, use as many as you like for a more generous topping.
    • Tear the burrata into pieces and distribute it evenly over the peaches and greens.
  3. Season and Dress
    • Drizzle a generous amount of olive oil over the salad.
    • Sprinkle with salt and pepper to taste.
    • Finish by drizzling the salad with balsamic glaze for a touch of sweetness and acidity that ties all the flavors together.
  4. Serve and Enjoy
    • Give the salad a gentle toss, if desired, or serve as is for a more composed presentation. Enjoy this delightful, fresh salad immediately for the best flavor.
