- 2 fresh peaches
- 2 tbls sugar
- 1 ball of burrata
- 4 cups of Spring Mix or Arugula
- Olive Oil
- Balsamic Glaze
- Salt
- Pepper
Instructions
- Prepare the Peaches
- Begin by heating up your grill to medium heat. If you prefer, you can also cook the peaches on the stove.
- Slice the peaches in half and remove the pits. Then, thinly slice each half.
- Brush the peach slices with olive oil and sprinkle them lightly with sugar. This will help caramelize the peaches and add a touch of sweetness.
- Place the peach slices on the grill and cook for 3-5 minutes until you see nice grill marks. Flip and cook for an additional 3 minutes on the other side.
- Remove the peaches from the grill and set them aside on a separate plate to cool.
- Assemble the Salad
- Add the Spring Mix or Arugula to a large serving dish. Both greens work well, but Arugula adds a slightly peppery bite that complements the sweetness of the peaches.
- Layer the grilled peach slices over the greens. If you’re a fan of grilled peaches, use as many as you like for a more generous topping.
- Tear the burrata into pieces and distribute it evenly over the peaches and greens.
- Season and Dress
- Drizzle a generous amount of olive oil over the salad.
- Sprinkle with salt and pepper to taste.
- Finish by drizzling the salad with balsamic glaze for a touch of sweetness and acidity that ties all the flavors together.
- Serve and Enjoy
- Give the salad a gentle toss, if desired, or serve as is for a more composed presentation. Enjoy this delightful, fresh salad immediately for the best flavor.
