Breakfast Casserole: A Delicious Way To Fuel The Masses During the Holiday Season
My healthy breakfast casserole recipe is loaded with lean protein and veggies that will satisfy your entire family this holiday season. You can throw this breakfast casserole into the oven on Christmas morning to enjoy with your holiday cocoa (and coffee, of course) after presents – it’s so delicious your family won’t even know how healthy it really is!
Make Christmas Morning a Breeze With This Make-Ahead Breakfast Casserole
Christmas morning is jam-packed with gifts, laughs, and un-stuffing stockings, so the last thing you probably want to do is have to put together a breakfast for everyone and miss the holiday morning fun. Luckily, you can make this healthy breakfast casserole ahead of time and all you need to do is pop it into the oven or reheat it on Christmas morning for your family to enjoy.
If you want to pull the casserole fresh out of the oven on Christmas morning, the day before you’ll want to chop up all of you ingredients, combine your egg mixture, and refrigerate that overnight. The next morning, add your sourdough and egg mixture into your baking dish and throw it into the oven to bake while you open presents.
Alternatively, you can bake this casserole a day or two before Christmas and then leave it covered in the refrigerator. On Christmas morning, quickly reheat it in the oven or microwave and serve with your fresh garnishes – no one will have any idea that you made it ahead!
Adjusting This Casserole to Fit Your Lifestyle
I love adjusting recipes to fit my lifestyle – in the morning, I try to eat a good amount of lean protein to keep my energized throughout the day. This breakfast casserole includes eggs, egg whites, and turkey sausage – along with added bell peppers and spinach to offer additional nutrients. If you prefer an even leaner casserole, you could make this with egg whites only (just double the amount of egg whites to replace the whole eggs). You can also substitute the meat for a different protein – whatever you prefer.
I also use sourdough bread in this recipe because I find sourdough to be more gut-healthy than other breads. If you’re gluten-free, keto, or anything else – use whatever works best for you. Cooking isn’t prescriptive – so I encourage you to make this recipe your own based on your lifestyle!
Why I Love This Recipe From a Health-Perspective
I am very intentional with my ingredients, I like to develop recipes that are both delicious and that will work for me by offering extra nutritional benefits to my body. This breakfast casserole is packed with protein and veggies, and uses sourdough bread as a gut-healthy alternative to other bread choices.
Earlier this year, I discovered that my body produces antibodies that attack my thyroid. My doctor highly recommended that I stick to an anti-inflammatory diet because of the correlation between thyroid function and inflammation. I create most recipes, including this breakfast casserole, with anti-inflammatory properties in mind. I’ve noticed that eating as clean as possible has made me feel better, heal faster, and help with my overall cognitive function. I am by no means a doctor or registered dietician, but I did want to share my personal “why” for creating recipes like this one because eating this way really has positively impacted my health, and I figured maybe it could help others, too.
