- 6 c sourdough bread (cubed)
- 2 c turkey sausage (diced up)
- 1/2 c Goat Cheese
- 2 c Spinach
- 1 diced bell pepper
- 16 oz Egg whites
- Salt (to taste)
- Pepper (to taste)
- Chives (optional garnish)
Instructions
- Preheat your oven to 350 degrees F
- Cube your sourdough bread and place it into a 9×13 inch baking dish
- Dice up your turkey sausage, bell pepper, and spinach and add it to a bowl with your eggs, egg whites, goat cheese, salt, and pepper
- Whisk the egg mixture until combined – add a couple tablespoons of water if needed
- Pour your egg mixture into your sourdough lined baking dish and place in the oven for 45-55 minutes until cooked through
- Remove your casserole from the oven and allow it to cool slightly before cutting and serving
- Top with fresh chives and additional goat cheese
