Ingredients

  • 6 c sourdough bread (cubed)
  • 2 c turkey sausage (diced up)
  • 1/2 c Goat Cheese
  • 2 c Spinach
  • 1 diced bell pepper
  • 16 oz Egg whites
  • Salt (to taste)
  • Pepper (to taste)
  • Chives (optional garnish)

Instructions

  1. Preheat your oven to 350 degrees F
  2. Cube your sourdough bread and place it into a 9×13 inch baking dish
  3. Dice up your turkey sausage, bell pepper, and spinach and add it to a bowl with your eggs, egg whites, goat cheese, salt, and pepper
  4. Whisk the egg mixture until combined – add a couple tablespoons of water if needed
  5. Pour your egg mixture into your sourdough lined baking dish and place in the oven for 45-55 minutes until cooked through
  6. Remove your casserole from the oven and allow it to cool slightly before cutting and serving
  7. Top with fresh chives and additional goat cheese
