Description

This Kale Caesar Salad with grilled chicken and Homemade Caesar Dressing recipe is unique, crunchy, and a delicious way to enjoy kale!


Ingredients

For the Kale Caesar Salad with Chicken:

Head of Kale, washed and chopped

12 Chicken Breasts (diced) *I prefer grilled in this!

Pecorino Romano Cheese (measure with your heart)

For the Dressing:

1/2 c Olive Oil

3 tbsp Mayonnaise

1/2 tsp Anchovy Paste

1/2 Small Lemon (juiced)

1 1/2 tsp Worcestershire Sauce

1 1/2 tsp Whole Grain Mustard (Seedy Mustard)

1/2 tsp Honey

Salt (to taste)

Pepper (to taste)


Instructions

  1. Prepare Your Salad Base: Start by washing your kale and chopping it into smaller strips so that it’s easy to eat. Cook your chicken and let it cool then dice it up into cubes as well. Lastly, you’ll want to grate your Pecorino cheese in a bowl and set it aside for your salad and dressing.
  2. Make Your Dressing: In a bowl (preferably one with a spouted top that’s easy to pour) combine your olive oil, mayo, mustard, lemon juice, anchovy paste, Worcestershire sauce, pecorino cheese, honey, salt, and pepper and mix using a whisk or fork until everything is combined. It should look like a creamy, off-white Caesar dressing. Taste and adjust with salt and pepper as needed.
  3. Assemble Your Salad: Add your kale, chicken, and pecorino to a large salad bowl. Pour your homemade caesar salad dressing over the top and toss it using tongs or salad servers until the dressing has lightly coated the entire salad.

  4. Garnish and Serve: Grate some additional pecorino cheese over the top as an added garnish, and enjoy!
