My Favorite Way to Make Carrots: Delicious and Simple Hot Honey Roasted Carrots
Hot honey has taken the internet by storm, and for good reason! These Hot Honey Roasted Carrots are absolutely delicious, incorporating all of the hot honey flavor you love with beautiful rainbow carrots. This is a perfect vegetable side dish to make during the week, meal prep, or bring to a dinner party because it’s so simple yet packed with flavor.
Hot Honey is Taking the Internet by Storm
When Trader Joe’s started carrying hot honey, I was intrigued so much so that I had to try it for myself and I must say I was not disappointed. It’s actually become one of my favorite condiments that I use frequently on avocado toast. I started making my own hot honey when I discovered my other favorite condiment, chili crunch. I thought, what if I use my favorite honey and combine it with my favorite chili crunch? Well, I haven’t looked back since.
To kick off the new year, I wanted to share easy vegetable recipes for people looking to eat healthier (5 Days of Veggies 5 Ways), and I tested three different roasted carrot recipes with honey and maple syrup before I came up with the idea to incorporate hot honey into a roasted carrot dish. Roasting veggies with a sugary condiment like honey can be tricky because at a high heat the sugar will caramelize, and then eventually burn up into a light crisp on your veggies (a few carrots were harmed in the making of this recipe, I must admit). For this recipe, I roast the carrots almost completely before adding the hot honey glaze over the top, then I throw them back into the oven to finish roasting and get that nice caramelization.
Why I Love This Recipe From a Health-Perspective
I am very intentional with my ingredients, I like to develop recipes that are both delicious and that will work for me by offering extra nutritional benefits to my body. Carrots offer excellent health benefits and are easy to roast, adding flavor and nutritional benefits to the dish you serve them with.
Earlier this year, I discovered that my body produces antibodies that attack my thyroid. My doctor highly recommended that I stick to an anti-inflammatory diet because of the correlation between thyroid function and inflammation. I create most recipes, including these Hot Honey Roasted Carrots, with anti-inflammatory properties in mind. I’ve noticed that eating as clean as possible has made me feel better, heal faster, and help with my overall cognitive function. I am by no means a doctor or registered dietician, but I did want to share my personal “why” for creating recipes like this one because eating this way really has positively impacted my health, and I figured maybe it could help others, too.
Ingredients:
- Rainbow Carrots
- Honey
- Chili Crisp
- Olive Oil
- Salt
How to Make Hot Honey Roasted Carrots
Pre-heat your oven to 350 degrees F
Prepare Your Ingredients: Start by washing, peeling, and slicing your rainbow carrots in half. (Pro tip Trader Joe’s sells 8 oz. packages of pre-peeled rainbow carrots if you want to make life easier, use these!)
Add Your Carrots to a Baking Dish: Add your peeled and sliced rainbow carrots to a glass baking dish (big enough so the carrots aren’t layered on top of each other – it’s okay if they’re touching, though!) and drizzle them with extra virgin olive oil and sprinkle with salt. Toss until fully coated and place your carrots in your pre-heated oven for 30-40 minutes until soft but not fully roasted
Make Your Hot Honey: While your carrots are roasting, combine your honey and chili crisp in a small bowl. Alternatively, you can use a pre-made hot honey if you prefer
Add Your Hot Honey Glaze: Remove your carrots from the oven and add your hot honey glaze over the top of them, tossing them with tongs to make sure they’re fully coating. Sprinkle with additional salt and place them back in the oven for 10-15 minutes until your carrots are fork tender and the honey has caramelized over the tops of them
Plate and Serve: Once cooked through, remove your carrots from the oven and transfer to a serving dish. Add additional hot honey over the top if preferred
