A Delicious New Way to Date: White Chocolate Covered Peanut Butter Dates

Medjool dates have been having a moment lately – and I’m absolutely here for it! These White Chocolate Covered Peanut Butter Dates are one of my favorite easy no bake desserts and variations of the viral chocolate covered dates, so easy to make, and a relatively guilt-free treat that you can store in your fridge or freeze for when you want a little something sweet! They’re sweet, creamy, chewy, and a delicious no-bake dessert that comes together quickly and can be enjoyed over a long period of time since they can be stored for 2-3 months in the freezer!

An Unexpectedly Delicious Combo: White Chocolate, Peanut Butter, and Nature’s Caramel (Medjool Dates)

Believe it or not, I draw a lot of sweet treat inspiration from my absolute favorite candy store of all time – See’s Candies. Growing up, I loved going into the See’s at my little mall in Reno, Nevada because I knew that even if I didn’t buy anything they would still give me a free sample. The different flavor combinations of some of the candies they sold amazed me, including the Polar Bear Paws: peanut caramel clusters covered in white chocolate. These things blew my mind, so when I was introduced to nature’s caramel, AKA Medjool dates, I knew that I had to try creating my very own version of the See’s Polar Bear Paws!

White chocolate is not a chocolate that I use often in my treats, I generally go for dark chocolate, but the unexpected flavor combination of white chocolate, peanuts, and “caramel” (dates) was so unique and delicious that it was enough for me to want to try and share this recipe.

Can I use a different nut butter instead of peanut butter?
Yes! You can substitute peanut butter with almond butter, cashew butter, or even a seed butter like sunflower butter if you have allergies.

How long do these last in the fridge or freezer?
These can last up to 2 weeks in the fridge and 2-3 months in the freezer if stored in an airtight container.

Can I use a different type of chocolate?
Absolutely! You can use dark chocolate, milk chocolate, or even dairy-free chocolate for a vegan-friendly version.

Do I have to freeze the dates before dipping them in chocolate?
Freezing helps the peanut butter firm up, making them easier to dip. If you skip this step, the peanut butter may be too soft, making the coating process messier.

Can I make these without coconut oil?
Yes! The coconut oil helps smooth out the melted chocolate, but you can leave it out or substitute it with a neutral oil like avocado or vegetable oil.

How to Make White Chocolate Covered Peanut Butter Dates

Pit Your Dates: If your dates still have the pits in them, remove them by carefully splitting open one side your your date with your fingers. Alternatively, you can use a knife to cut halfway down the long side of each date for a cleaner cut. Discard the pits.

*If you are using pitted dates, you’ll still want to cut or pull them apart halfway down the long side so that you can fill them with peanut butter in the next step!

Stuff Your Dates: Scoop your peanut butter into a plastic bag and cut the tip off so that you can pipe it into the center of your dates where you made your cut down the long edge of the date. Pipe your peanut butter into each date and press the open ends of the date together to sandwich the peanut butter in the middle.

Freeze Your Dates: Once all of your dates are stuffed with peanut butter, place them seam-side up in a container or a small parchment-lined baking sheet and put them in the freezer to set for 15-30 minutes. While your dates set, chop up your peanuts and set them aside in a small bowl.

Melt Your White Chocolate: Once your dates have had time to set in the freezer and the peanut butter is stiff in place, add white chocolate to a bowl with coconut oil place it over a shallow simmering pot of water, mixing periodically until the chocolate has melted (double-boiler method). Alternatively, you can place your chocolate and coconut oil in the microwave and heat then stir it in 30-second increments until the chocolate has fully melted. *Make sure that you do NOT overheat your chocolate, it will burn and become crumbly if it gets too hot so keep an eye on it especially if using a microwave!

Coat Your Dates: Once your white chocolate is melted, you can start coating your dates! Use a fork to lower each date into the chocolate and roll it until completely covered. Lift each date out of the melted chocolate and wipe the bottom of your fork on the edge of the bowl to get rid of any excess chocolate before placing your coated dates onto a parchment-lined baking sheet or container. Lastly, sprinkle your chopped peanuts over the top of each of your coated dates before they set.

Freeze Your Dates: After all of your dates have been coated and garnished, place them back in your freezer for 15-30 minutes until the chocolate has hardened around your dates.

Storing Your Dates: Store your dates in the freezer and enjoy whenever you want a little sweet treat! You can also keep them in the fridge if you prefer a softer treat.

2 c Medjool Dates

1/2 c Creamy Peanut Butter

2 c White Chocolate

1 tbsp Coconut Oil
